Ingredients
- 4 salmon fillets (skin-on or skinless)
- 1 cup fresh or canned pineapple chunks (plus ½ cup pineapple juice)
- ¼ cup honey
- 3 tbsp soy sauce
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated (optional)
- 1 tbsp olive oil or butter
- Salt and black pepper, to taste
- Optional garnish: chopped green onions, sesame seeds
Instructions
- Preheat oven to 400°F or heat a skillet over medium heat.
- In a small saucepan, combine pineapple juice, honey, soy sauce, garlic, and ginger. Simmer 4–5 minutes until slightly thickened into a glaze.
- Season salmon with salt and pepper. In a skillet, sear salmon skin-side down in oil for 2–3 minutes to crisp the edges.
- Brush salmon with glaze. Transfer to oven (or reduce skillet heat) and cook 10–12 minutes, basting with more glaze as it cooks.
- Serve hot, topped with pineapple chunks, green onions, or sesame seeds.
Notes
- Add lime juice for extra citrusy brightness.
- Sprinkle chili flakes into the glaze for a spicy kick.
- Grill the salmon for a smoky, charred flavor.
- Serve with coconut rice and grilled pineapple for a tropical-style meal.
