Ingredients
- 1 lb whole mushrooms (button or cremini), cleaned and trimmed
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp honey
- 1 tbsp soy sauce or tamari
- 1 tsp fresh thyme or rosemary (optional)
- Salt and black pepper, to taste
- 1 tbsp chopped parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Clean the mushrooms with a damp cloth and trim stems if needed.
- In a bowl, whisk together olive oil, honey, soy sauce, garlic, salt, pepper, and herbs if using.
- Toss mushrooms in the mixture until well coated.
- Spread mushrooms in a single layer on the baking sheet.
- Roast for 20–25 minutes, stirring halfway, until tender and caramelized.
- Sprinkle with parsley if desired and serve warm.
