Description

Tender mushrooms roasted in a savory-sweet honey garlic glaze until caramelized and deeply flavorful—perfect as a side, appetizer, or topping.

Ingredients

  • 1 lb whole mushrooms (button or cremini), cleaned and trimmed
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp honey
  • 1 tbsp soy sauce or tamari
  • 1 tsp fresh thyme or rosemary (optional)
  • Salt and black pepper, to taste
  • 1 tbsp chopped parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Clean the mushrooms with a damp cloth and trim stems if needed.
  3. In a bowl, whisk together olive oil, honey, soy sauce, garlic, salt, pepper, and herbs if using.
  4. Toss mushrooms in the mixture until well coated.
  5. Spread mushrooms in a single layer on the baking sheet.
  6. Roast for 20–25 minutes, stirring halfway, until tender and caramelized.
  7. Sprinkle with parsley if desired and serve warm.

Notes

  • Use maple syrup instead of honey to make it vegan.
  • Add balsamic vinegar for extra depth.
  • Toss with chili flakes for heat.
  • Roast with onions or bell peppers to make it more robust.
  • Use larger mushrooms sliced or quartered to ensure even roasting.
