Ingredients
- 1 cup cooked brown rice or white rice
- 1 cup steamed broccoli florets, chopped
- 1/2 cup cooked chicken breast or cottage cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup plain Greek yogurt
- 1/4 cup milk
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook rice according to package directions if not already prepared.
- Steam broccoli until tender and chop into small pieces.
- In a microwave-safe bowl, combine cooked rice, broccoli, and chicken (or cottage cheese).
- In a small bowl, mix Greek yogurt, milk, garlic powder, salt, and black pepper until smooth.
- Stir the yogurt mixture into the rice mixture.
- Add shredded cheddar and mix gently.
