Healthy No-Bake Strawberry Lemon Cheesecake Jars are refreshing, portioned desserts made with a creamy lemon cheesecake filling, wholesome crust, and fresh strawberries. Lightened up with Greek yogurt and sweetened naturally, they’re perfect for warm-weather treats without turning on the oven.
Ingredients
- For the crust:
- 1/2 cup rolled oats or crushed graham crackers
- 2 tbsp almond flour or ground nuts (optional)
- 2 tbsp coconut oil or melted butter
- 1–2 tbsp maple syrup or honey
- Pinch of salt
- For the filling:
- 1/2 cup Greek yogurt (plain or vanilla)
- 4 oz light cream cheese or Neufchâtel, softened
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp maple syrup or honey
- 1/2 tsp vanilla extract
- For the topping:
- 1 cup fresh strawberries, chopped or sliced
- 1 tsp lemon juice (optional, to macerate berries)
- Optional: 1 tsp chia seeds or 1 tbsp strawberry jam
Instructions
- In a bowl, combine oats or crushed grahams, almond flour (if using), melted coconut oil, sweetener, and salt until mixture is crumbly.
- Press 1–2 tablespoons of the crust into the bottom of each jar or serving glass.
- In a separate bowl, beat together Greek yogurt, cream cheese, lemon juice, lemon zest, sweetener, and vanilla until smooth.
- Spoon or pipe the cheesecake filling evenly into the jars over the crust.
- Top with strawberries. Optional: toss berries with lemon juice and sweetener before topping.
- Chill in the fridge for at least 1 hour before serving.

- Use dairy-free yogurt and cream cheese for a vegan version.
- Add granola between layers for a cheesecake-parfait twist.
- Blend some strawberries into the filling for added fruit flavor and color.
