Description

Healthy No-Bake Strawberry Lemon Cheesecake Jars are refreshing, portioned desserts made with a creamy lemon cheesecake filling, wholesome crust, and fresh strawberries. Lightened up with Greek yogurt and sweetened naturally, they’re perfect for warm-weather treats without turning on the oven.


Ingredients

  • For the crust:
  • 1/2 cup rolled oats or crushed graham crackers
  • 2 tbsp almond flour or ground nuts (optional)
  • 2 tbsp coconut oil or melted butter
  • 12 tbsp maple syrup or honey
  • Pinch of salt
  • For the filling:
  • 1/2 cup Greek yogurt (plain or vanilla)
  • 4 oz light cream cheese or Neufchâtel, softened
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • For the topping:
  • 1 cup fresh strawberries, chopped or sliced
  • 1 tsp lemon juice (optional, to macerate berries)
  • Optional: 1 tsp chia seeds or 1 tbsp strawberry jam

Instructions

  1. In a bowl, combine oats or crushed grahams, almond flour (if using), melted coconut oil, sweetener, and salt until mixture is crumbly.
  2. Press 1–2 tablespoons of the crust into the bottom of each jar or serving glass.
  3. In a separate bowl, beat together Greek yogurt, cream cheese, lemon juice, lemon zest, sweetener, and vanilla until smooth.
  4. Spoon or pipe the cheesecake filling evenly into the jars over the crust.
  5. Top with strawberries. Optional: toss berries with lemon juice and sweetener before topping.
  6. Chill in the fridge for at least 1 hour before serving.

Notes

  • Use dairy-free yogurt and cream cheese for a vegan version.
  • Add granola between layers for a cheesecake-parfait twist.
