Ground Beef Cheesy Quesadillas are a quick and satisfying handheld meal packed with seasoned beef and gooey melted cheese in a crispy tortilla. Perfect for lunch, dinner, or a snack, they’re easy to make and full of flavor.
Ingredients
- 1 lb ground beef
- 1 tbsp olive oil or butter
- 1 small onion, diced
- 1 tbsp taco seasoning
- 1/2 tsp garlic powder
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- Optional: sour cream, salsa, guacamole, chopped cilantro for serving
Instructions
- Heat olive oil in a skillet over medium heat. Sauté diced onions until soft.
- Add ground beef and cook until browned. Stir in taco seasoning and garlic powder, cook until well blended.
- Remove beef from skillet and wipe skillet clean.
- Place a tortilla in the skillet over medium heat. Sprinkle cheese over half the tortilla.
- Add seasoned beef over the cheese and top with a bit more cheese. Fold the tortilla over and press lightly.
- Cook 2–3 minutes per side until golden brown and cheese is melted.
- Repeat with remaining ingredients. Slice into wedges and serve with toppings if desired.
