Description

A fresh and rustic potato salad made with grilled baby potatoes tossed in a bright scallion vinaigrette for a smoky, tangy, and refreshing side dish.


Ingredients

  • 2 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 4 scallions, finely sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 small garlic clove, minced
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Place the halved baby potatoes in a pot of salted water and bring to a boil. Cook for 10–12 minutes until just tender. Drain and allow them to cool slightly.
  2. Toss the cooked potatoes with olive oil, salt, and black pepper until lightly coated.
  3. Preheat a grill or grill pan over medium heat. Place the potatoes cut-side down and grill for 5–7 minutes until grill marks appear and the edges are crisp and lightly golden.
  4. In a small bowl, prepare the scallion vinaigrette by whisking together the sliced scallions, olive oil, red wine vinegar, Dijon mustard, lemon juice, minced garlic, and chopped parsley.
  5. Season the vinaigrette with salt and black pepper to taste.
  6. Transfer the grilled potatoes to a serving bowl while still warm.
  7. Pour the scallion vinaigrette over the potatoes and gently toss to coat evenly.
  8. Taste and adjust seasoning with additional salt and pepper if needed. Serve warm, at room temperature, or slightly chilled.

Notes

  • Roast the potatoes at 425°F (220°C) for about 20 minutes if you do not have a grill.
  • Baby potatoes or Yukon Gold potatoes work best because they hold their shape well.
  • Add grilled corn, cherry tomatoes, or sliced radishes for extra color and texture.
  • Fresh herbs like dill, basil, or chives can enhance the flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in a skillet with a small drizzle of olive oil or a splash of vinegar to refresh the flavor.
