Ingredients
- 4 chicken breasts
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 2 tbsp lime juice
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp cumin
- 1 cup shredded mozzarella or Monterey Jack cheese
- Fresh cilantro, chopped (optional)
Instructions
- Preheat the grill to medium-high heat.
- Rub chicken breasts with olive oil, garlic, salt, pepper, paprika, and cumin.
- Place chicken on the grill and cook for 5–7 minutes per side until fully cooked and nicely charred.
- While the chicken cooks, combine diced avocado, cherry tomatoes, red onion, lime juice, and a pinch of salt in a bowl to make the topping.
- In the last 2 minutes of grilling, add cheese on top of the chicken and allow it to melt.
- Remove chicken from the grill and top with the avocado mixture.
- Garnish with fresh cilantro if desired and serve immediately.
