Ingredients
- 1 1/2 cups mashed sweet potatoes (cooked and cooled)
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup unsalted butter, softened
- 3 large eggs
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 2 tsp vanilla extract
- 1/2 cup buttermilk
Instructions
- Preheat oven to 350°F (175°C) and grease a bundt pan or 9×13-inch baking dish.
- Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then mix in mashed sweet potatoes and vanilla extract.
- In a separate bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Add dry ingredients to the wet mixture in batches, alternating with buttermilk, mixing just until combined.
- Pour batter into prepared pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
