A sweet and savory gourmet grilled cheese sandwich made with melty brie or white cheddar, juicy fresh blueberries, and crispy golden artisan bread for a comforting yet elevated twist on a classic favorite.
Ingredients
- 4 thick slices artisan bread (such as sourdough or brioche)
- 1 cup fresh blueberries
- 4 ounces brie cheese or white cheddar, sliced
- 2 tablespoons cream cheese (optional)
- 2 tablespoons unsalted butter, softened
- 1 teaspoon fresh thyme leaves (optional)
- 1–2 teaspoons honey (optional)
Instructions
- Spread a thin layer of butter on one side of each slice of bread.
- If using cream cheese, spread a light layer on the unbuttered side of one slice.
- Layer brie or white cheddar evenly over the unbuttered side of the bread.
- Scatter fresh blueberries evenly over the cheese. Sprinkle with fresh thyme and drizzle with honey if desired.
- Top with the second slice of bread, buttered side facing outward.
- Heat a skillet over medium-low heat and place the sandwich in the pan.
- Cook slowly for 4–5 minutes per side, until the bread is golden brown and crisp and the cheese is fully melted.
- Remove from heat, let rest for 1 minute, then slice and serve warm.
Notes
- Use fresh blueberries to prevent excess moisture.
- Keep heat at medium-low to allow the cheese to melt without burning the bread.
- Sharp white cheddar provides a stronger savory contrast than brie.
- A handful of baby spinach can be added for extra texture.
