Ingredients
- 2 lbs Yukon Gold or Russet potatoes, peeled and cut into chunks
- 6 tbsp unsalted butter
- 1/2 to 3/4 cup heavy cream or whole milk
- 1 tsp salt, plus more to taste
- 1/4 tsp white pepper or black pepper
- Optional: 2 tbsp crème fraîche or sour cream
- Optional: chopped chives for garnish
Instructions
- Place peeled, chopped potatoes in a large pot and cover with cold, salted water.
- Bring to a boil over medium heat and cook until fork-tender, about 15–20 minutes.
- Drain potatoes well and return to warm pot or bowl to let steam off excess moisture.
- In a small saucepan, heat butter and cream until warm (not boiling).
- Mash potatoes using a potato ricer or masher until smooth.
- Gradually stir in the warm butter and cream until creamy and smooth.
- Season with salt and pepper to taste.
- Optional: Stir in crème fraîche or sour cream for extra richness.
- Serve warm, garnished with chopped chives if desired.

- Use a ricer for the smoothest mash; avoid food processors to prevent gumminess.
- Mix Yukon Gold and Russet potatoes for the ideal texture balance.
- Warm the cream and butter before adding for better absorption and smoothness.
- Infuse the cream with herbs like thyme or garlic for added flavor.
