Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 2–3 tbsp olive oil or vegetable oil (for frying)
- 2 tbsp butter (for sauce)
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 3/4 cup chicken broth
- 3/4 cup heavy cream or half-and-half
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning or thyme
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Season chicken with salt, pepper, garlic powder, and paprika.
- Dredge each piece in flour, shaking off excess.
- Heat oil in a large skillet over medium heat. Cook chicken until golden and crispy on both sides, about 4–5 minutes per side. Remove and set aside.
- In the same skillet, melt butter and sauté minced garlic for 30 seconds.
- Add mushrooms and cook until browned and tender, about 5–7 minutes.
- Pour in chicken broth to deglaze the pan. Simmer for 2–3 minutes.
- Stir in cream, Parmesan cheese, and Italian seasoning. Simmer until sauce thickens, about 3–5 minutes.
- Return chicken to the pan, spoon sauce over the top, and heat through for another 2–3 minutes.
- Garnish with chopped parsley and serve hot.
