Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 23 tbsp olive oil or vegetable oil (for frying)
  • 2 tbsp butter (for sauce)
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 3/4 cup chicken broth
  • 3/4 cup heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning or thyme
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Season chicken with salt, pepper, garlic powder, and paprika.
  2. Dredge each piece in flour, shaking off excess.
  3. Heat oil in a large skillet over medium heat. Cook chicken until golden and crispy on both sides, about 4–5 minutes per side. Remove and set aside.
  4. In the same skillet, melt butter and sauté minced garlic for 30 seconds.
  5. Add mushrooms and cook until browned and tender, about 5–7 minutes.
  6. Pour in chicken broth to deglaze the pan. Simmer for 2–3 minutes.
  7. Stir in cream, Parmesan cheese, and Italian seasoning. Simmer until sauce thickens, about 3–5 minutes.
  8. Return chicken to the pan, spoon sauce over the top, and heat through for another 2–3 minutes.
  9. Garnish with chopped parsley and serve hot.
