Description

Fun, fluffy homemade marshmallows decorated to look like the iconic Stay Puft Marshmallow Man from Ghostbusters. Perfect for Halloween, themed parties, or nostalgic movie nights.

Ingredients

  • 3 packets unflavored gelatin
  • 1/2 cup cold water (for blooming)
  • 1 1/2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1/2 cup water (for syrup)
  • 1 tablespoon vanilla extract
  • 1/4 cup powdered sugar
  • 1/4 cup cornstarch
  • Blue and red food coloring
  • Edible marker or decorating gel (for faces)
  • Cooking spray
  • Marshmallow molds or 9×9-inch pan

Instructions

  1. In a mixer bowl, combine gelatin and 1/2 cup cold water. Let bloom for 10 minutes.
  2. In a saucepan, heat granulated sugar, corn syrup, salt, and 1/2 cup water over medium heat until it reaches 240°F. Use a candy thermometer for accuracy.
  3. With mixer on low, slowly pour hot syrup into gelatin mixture. Increase speed to high and beat until thick, fluffy, and white (10–12 minutes).
  4. Mix in vanilla extract during the last minute.
  5. Spray mold or pan with cooking spray. Mix powdered sugar and cornstarch; dust the pan or molds generously.
  6. Pour marshmallow mixture into prepared mold/pan. Smooth top with spatula. Dust with more powdered sugar/cornstarch mix.
  7. Let set uncovered at room temperature for 4–6 hours or overnight.
  8. Cut into squares or pop from molds. Decorate each marshmallow with blue food coloring (hat), red (ribbon), and use edible markers or gel for Stay Puft faces.

Notes

  • Add peppermint or almond extract for different flavors.
  • Dip finished marshmallows in chocolate or graham cracker crumbs for extra fun.
  • Store-bought marshmallows can be used if short on time — just decorate them.
  • Use silicone molds for consistent shapes and easy decorating.
