Ingredients
- 2 cups cooked white rice (preferably day-old)
- 4 cloves garlic, minced
- 2 tablespoons neutral oil (canola or vegetable)

- 1–2 large eggs
- Chopped scallions or parsley (optional, for garnish)
- Soy sauce or chili flakes (optional, for serving)
Instructions
- If using day-old rice, break it up with a spoon or hands to separate the grains.
- Heat oil in a skillet over medium heat. Add garlic and sauté for 1–2 minutes until golden and fragrant. Remove a spoonful for topping.
- Add rice to the skillet and toss to coat in garlic oil. Press down slightly and let it sit for 1–2 minutes to crisp, then stir and continue frying for 5–7 minutes. Season with salt.
- In a separate skillet, fry 1–2 eggs in oil until edges are crispy and yolk is still runny. Season with salt and pepper.
- Serve garlic rice in a bowl, top with fried egg, reserved crispy garlic, and optional scallions, soy sauce, or chili flakes.
