Description

Garlic Parmesan Chicken and Potatoes is a cozy, one-pan dinner featuring juicy chicken and crispy roasted potatoes tossed in a savory garlic-Parmesan seasoning. It’s quick to prep, easy to clean up, and packed with cheesy, herby flavor—perfect for busy weeknights or comforting weekend meals.


Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1.5 lbs baby potatoes, halved (or regular potatoes cut into chunks)
  • 3 tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1/2 tsp paprika (optional)
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, toss potatoes with 1.5 tbsp olive oil, half of the garlic, 1/4 cup Parmesan, Italian seasoning, salt, pepper, and paprika.
  3. Spread the seasoned potatoes on one side of the baking sheet.
  4. Rub chicken with remaining olive oil and coat with the rest of the garlic, Parmesan, salt, and pepper.
  5. Place chicken on the other side of the baking sheet (or between potatoes if space is tight).
  6. Roast for 30–35 minutes, flipping potatoes halfway through, until chicken reaches 165°F and potatoes are golden and crispy.
  7. Garnish with extra Parmesan and parsley before serving.

Notes

  • Add vegetables like green beans or broccoli during the last 10–15 minutes of roasting.
  • Use bone-in chicken for extra flavor—just increase bake time by 10–15 minutes.
  • Freshly grated Parmesan yields the best texture and taste.
