Ingredients
- 1.5 lbs beef sirloin or steak tips, cut into bite-sized pieces
- 1.5 lbs baby potatoes, halved or quartered
- 4 tbsp unsalted butter
- 4 cloves fresh garlic, minced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Boil or microwave baby potatoes until just fork-tender, then drain and pat dry.
- Heat olive oil in a large skillet over medium-high heat.
- Season beef bites with salt, pepper, paprika, and Italian seasoning.
- Sear beef in the skillet until browned on all sides, about 3–5 minutes. Remove and set aside.
- In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute.
- Add the cooked potatoes to the skillet and let them brown in the garlic butter, stirring occasionally.
- Return beef bites to the skillet and toss everything together until evenly coated and heated through.
- Sprinkle with fresh parsley and serve hot.
Notes
- Use a cast-iron skillet for the best sear and flavor.
- Pre-cooking the potatoes ensures a perfect tender-crisp texture.
- Customize with vegetables like mushrooms, bell peppers, or green beans.
- For extra flavor, add smoked paprika or red pepper flakes.
- Leftovers reheat best in a skillet to keep the potatoes crispy.
