  • 1 bell pepper, diced
  • 1/4 cup chopped fresh herbs (parsley, cilantro, or basil)
  • 1/4 cup crumbled feta or goat cheese (optional)
  • 2 tbsp nuts or seeds (walnuts, almonds, pumpkin seeds; optional)
  • Tangy Dressing:
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice or apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions
