- 1 bell pepper, diced
- 1/4 cup chopped fresh herbs (parsley, cilantro, or basil)
- 1/4 cup crumbled feta or goat cheese (optional)
- 2 tbsp nuts or seeds (walnuts, almonds, pumpkin seeds; optional)
- Tangy Dressing:
- 3 tbsp olive oil

Instructions
