Description

A savory twist on classic meatloaf, French Onion Meatloaf blends rich ground beef, sweet caramelized onions, and melty Swiss or Gruyère cheese into one comforting and flavorful dish.

Ingredients

  • 1 1/2 lbs ground beef (or a mix of beef and pork)
  • 2 eggs
  • 3/4 cup bread crumbs
  • 2 large onions, thinly sliced and caramelized
  • 1 packet French onion soup mix or 1 tbsp beef bouillon
  • 1 tbsp Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 cup shredded Swiss or Gruyère cheese
  • Salt and black pepper, to taste
  • Optional: fresh thyme or parsley, for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and line or grease a loaf pan.
  2. Caramelize onions in a skillet over medium-low heat until golden and soft, about 20–25 minutes.
  3. In a large bowl, mix ground meat, eggs, breadcrumbs, soup mix or bouillon, Worcestershire sauce, garlic, salt, pepper, and half the caramelized onions.
  4. Press the mixture into the prepared loaf pan and smooth the top.
  5. Bake for 40 minutes, then top with shredded cheese and remaining onions.
  6. Return to oven and bake for 10–15 more minutes, until cheese is bubbly and internal temperature reaches 160°F (71°C).
  7. Let rest for 5–10 minutes before slicing. Garnish with herbs if desired.

Notes

  • Swap in Gruyère for a more traditional flavor or ground turkey for a lighter version.
  • Top with beef gravy or onion soup reduction for added richness.
  • Form into mini loaves to reduce cooking time.
