Ingredients

  • For the sandwich:
  • 4 slices crusty bread (like sourdough or French bread)
  • 68 slices thinly sliced roast beef (deli-style or leftover)
  • 4 slices provolone or Swiss cheese
  • Butter or mayo (for toasting)
  • For the au jus (dipping sauce):
  • 1 1/2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 clove garlic, minced
  • 1/4 tsp onion powder
  • 1 tsp soy sauce (optional)
  • Black pepper, to taste
  • 1 tbsp butter

Instructions

  1. Make the au jus: In a small saucepan, melt butter over medium heat. Sauté garlic for 1–2 minutes.
  2. Add beef broth, Worcestershire sauce, onion powder, soy sauce (if using), and black pepper. Simmer for 5–10 minutes. Keep warm.
  3. Butter or mayo one side of each bread slice.
  4. Assemble the sandwich: On the unbuttered side of one slice, layer cheese, roast beef, and more cheese. Top with the second slice, buttered side out.
  5. In a skillet over medium heat, grill the sandwich for 3–4 minutes per side, until golden brown and the cheese is melted.
  6. Slice and serve hot with a bowl of warm au jus for dipping.
