Forgotten Chicken is a simple dump-and-bake casserole made with chicken, rice, and creamy soups that cooks low and slow until everything is tender and packed with savory flavor. It’s the perfect no-fuss, set-it-and-forget-it dinner.
Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 cup long grain white rice (uncooked)
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 1/2 cups chicken broth
- 1 packet onion soup mix
- Salt and pepper to taste
- Optional: 1/2 tsp garlic powder or paprika
- Optional: chopped parsley or green onions for garnish
Instructions
- Preheat oven to 300°F (150°C) and lightly grease a 9×13-inch baking dish.
- In a large bowl, whisk together cream of chicken soup, cream of mushroom soup, chicken broth, and uncooked rice.
- Pour the mixture into the prepared baking dish.
- Season the chicken with salt, pepper, and any optional seasonings, then place over the rice mixture.
- Sprinkle onion soup mix evenly over the chicken.
- Cover tightly with foil and bake for 2.5 to 3 hours without uncovering.
- Remove from oven and let rest for 5–10 minutes before serving. Garnish with parsley or green onions if desired.

- Don’t open the foil while baking—it steams the rice and chicken perfectly.
- Use chicken thighs for extra juiciness.
