Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk or buttermilk
- 1 1/2 tsp vanilla extract
- Optional: 1/4 cup sour cream or Greek yogurt
Instructions
- Preheat oven to 350°F. Grease or line a standard loaf pan with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each. Stir in vanilla.
- Mix in dry ingredients in two additions, alternating with milk. Add sour cream or yogurt if using. Stir just until combined.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Fold in berries, chocolate chips, or swirl in jam for variation.
- Add citrus zest for a lemon or orange twist.
- Top with vanilla glaze or powdered sugar for a polished finish.
- Can be frozen in slices and reheated as needed.
