Description

This fluffy vanilla loaf cake is soft, buttery, and full of rich vanilla flavor. Perfect for brunch, dessert, or tea time, it’s a simple yet elegant treat with a tender crumb and golden crust.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk or buttermilk
  • 1 1/2 tsp vanilla extract
  • Optional: 1/4 cup sour cream or Greek yogurt

Instructions

  1. Preheat oven to 350°F. Grease or line a standard loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each. Stir in vanilla.
  5. Mix in dry ingredients in two additions, alternating with milk. Add sour cream or yogurt if using. Stir just until combined.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
