Description

Energizing Banana Oatmeal Bars are soft, chewy, and naturally sweetened snack bars packed with wholesome ingredients like ripe bananas and oats. They’re perfect for breakfast, meal prep, or a healthy snack on the go.


Ingredients

  • 3 ripe bananas, mashed
  • 2 cups old-fashioned rolled oats
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • Optional add-ins: 1/4 cup dark chocolate chips, chopped nuts, dried fruit, shredded coconut, or chia seeds

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mash the bananas until smooth.
  3. Stir in the peanut butter, honey or maple syrup, vanilla extract, cinnamon, salt, and baking powder until well combined.
  4. Fold in the rolled oats and any optional mix-ins.
  5. Press the mixture evenly into the prepared pan.
  6. Bake for 20–25 minutes, or until the edges are golden and the center is set.
  7. Let the bars cool completely in the pan before slicing into squares or rectangles.
