Ingredients
- 3 ripe bananas, mashed
- 2 cups old-fashioned rolled oats
- 1/2 cup peanut butter or almond butter
- 1/4 cup honey or maple syrup
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- Optional add-ins: 1/4 cup dark chocolate chips, chopped nuts, dried fruit, shredded coconut, or chia seeds
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mash the bananas until smooth.
- Stir in the peanut butter, honey or maple syrup, vanilla extract, cinnamon, salt, and baking powder until well combined.
- Fold in the rolled oats and any optional mix-ins.
- Press the mixture evenly into the prepared pan.
- Bake for 20–25 minutes, or until the edges are golden and the center is set.
- Let the bars cool completely in the pan before slicing into squares or rectangles.
