Description

Egg Salad Lettuce Wraps are a fresh, low-carb alternative to traditional egg salad sandwiches. Made with creamy eggs, juicy tomatoes, and served in crisp lettuce leaves, they’re perfect for a quick lunch or light dinner.

Ingredients

  • 6 hard-boiled eggs, chopped
  • 1/2 cup cherry tomatoes, halved or diced
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard (optional)
  • Salt and pepper, to taste
  • Butter lettuce or romaine leaves (6 large leaves)
  • Chives or green onions, chopped (optional garnish)

Instructions

  1. Chop hard-boiled eggs and place in a mixing bowl.
  2. Add diced cherry tomatoes.
  3. Stir in mayonnaise and Dijon mustard, if using. Season with salt and pepper.
  4. Mix until creamy and well combined.
  5. Spoon egg salad into lettuce leaves.
  6. Top with chopped chives or green onions, if desired.
  7. Serve immediately or chill filling and assemble wraps before eating.

Notes

  • Add avocado or hot sauce for extra flavor.
  • Serve in low-carb tortillas or pitas for a heartier version.
  • Incorporate diced cucumbers, bell peppers, or shredded carrots for extra crunch.
  • Mix in a splash of lemon juice for added brightness.
  • Prepare the egg salad ahead and store separately from lettuce.
