Description

These Easy Strawberry Peach Pie Bites are a fun and quick way to enjoy the flavor of fruit pie in bite-sized form. They’re flaky, fruity, and perfect for any gathering or a sweet treat at home.


Ingredients

  • 2 refrigerated pie crusts or puff pastry sheets
  • 1 cup fresh or frozen strawberries, diced
  • 1 cup fresh or frozen peaches, peeled and diced
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon (optional)
  • 1 egg (for egg wash)
  • Coarse sugar or cinnamon sugar, for topping

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine strawberries, peaches, sugar, lemon juice, cornstarch, and cinnamon. Cook over medium heat until thickened, about 5–7 minutes. Let cool.
  3. Roll out pie crust and cut into 2–3 inch circles or squares.
  4. Spoon a small amount of filling into the center of each piece. Top with another piece or fold to seal, pressing edges with a fork.
  5. Brush tops with egg wash and sprinkle with coarse sugar or cinnamon sugar.
  6. Bake for 15–20 minutes until golden brown and bubbling. Let cool before serving.
