These Easy Strawberry Peach Pie Bites are a fun and quick way to enjoy the flavor of fruit pie in bite-sized form. They’re flaky, fruity, and perfect for any gathering or a sweet treat at home.
Ingredients
- 2 refrigerated pie crusts or puff pastry sheets
- 1 cup fresh or frozen strawberries, diced
- 1 cup fresh or frozen peaches, peeled and diced
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 1/2 tsp cinnamon (optional)
- 1 egg (for egg wash)
- Coarse sugar or cinnamon sugar, for topping
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a saucepan, combine strawberries, peaches, sugar, lemon juice, cornstarch, and cinnamon. Cook over medium heat until thickened, about 5–7 minutes. Let cool.
- Roll out pie crust and cut into 2–3 inch circles or squares.
- Spoon a small amount of filling into the center of each piece. Top with another piece or fold to seal, pressing edges with a fork.
- Brush tops with egg wash and sprinkle with coarse sugar or cinnamon sugar.
- Bake for 15–20 minutes until golden brown and bubbling. Let cool before serving.

- Cut dough into even pieces to ensure uniform baking.
- Press edges well to avoid filling leakage.
- Can be made in mini muffin tins for a different shape.
