Ingredients
- 8 oz fresh mushrooms, sliced (cremini or button)
- 4 cups fresh spinach leaves
- 2 tbsp olive oil or butter

- Optional: 1 tsp lemon juice or balsamic vinegar
Instructions
- Heat olive oil or butter in a skillet over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add sliced mushrooms, season with salt and pepper, and cook for 5–7 minutes until golden and moisture evaporates.
- Add fresh spinach and cook, stirring frequently, until wilted and tender.
- Finish with a squeeze of lemon juice or a splash of balsamic vinegar if desired.
Notes
- Add sliced onions or shallots at the start for added sweetness.
- Top with freshly grated Parmesan or toasted pine nuts for extra flavor and texture.
- Toss in red pepper flakes for a spicy kick.
