This easy Pistachio Pie recipe is a hit with friends and family! Extra creamy and completely irresistible, this no-bake pistachio pie takes just minutes to prepare and is perfect for family gatherings, potlucks, and picnics.
Ingredients
Cream Cheese Mixture:
- 8 ounces cream cheese, softened
- 3.4 ounces package pistachio Jell-O instant pudding mix
Pie Filling:
- 20 ounces crushed pineapple, including juice (in 100% juice, not syrup)
- 1 cup miniature marshmallows
- 8 ounces Cool Whip or 1 cup heavy whipping cream, whipped to stiff peaks
Optional Toppings:
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- ½ cup chopped pistachios
- Maraschino cherries
For Crust:
- Prepared pie crust (Nilla Wafer or graham cracker crust)
Instructions
- Cream Cheese Mixture: In a large bowl, beat the cream cheese and pudding mix together until light and fluffy.
- Pie Filling: Stir in marshmallows. Fold in Cool Whip or whipped cream.
- Optional Toppings: Beat whipped cream and powdered sugar together until stiff peaks form. Pipe onto the top of the pie. Add maraschino cherries and sprinkle with chopped pistachios.
Beat in crushed pineapple including juice.
Spoon filling into cooled pie crust and chill for at least two hours.
Notes
- This recipe makes enough filling for a 9.5-inch pie plate. Extra filling can be enjoyed as a dessert salad.
- Storage Information: Pie can be stored tightly covered in the refrigerator for up to 2 days. For freezing, wrap tightly in plastic wrap and foil without whipped cream topping for best results. Transfer to a freezer-safe, ziplock bag.
