Ingredients
- 3/4 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 tbsp lemon zest
- 3 tbsp lemon juice
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1/2 cup powdered sugar (for glaze)
- 1–2 tbsp lemon juice (for glaze)
- Optional: extra lemon zest for garnish
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 or 9×9 inch pan with parchment paper or grease lightly.
- Cream butter and sugar together in a bowl until smooth.
- Mix in eggs, lemon juice, lemon zest, and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to wet mixture and stir until smooth.
- Spread batter evenly in the prepared pan. Bake for 22–28 minutes or until a toothpick comes out with moist crumbs.
- Let the brownies cool almost completely.
- Whisk together powdered sugar and lemon juice to make the glaze. Pour over cooled brownies and spread evenly.
- Let glaze set, then slice into squares and serve.
