Description

These Easy Lemon Brownies are a sweet and tangy twist on the classic brownie. With a soft, chewy texture and a vibrant lemon glaze, they’re refreshing, bright, and incredibly easy to make with simple pantry ingredients—perfect for brunch, dessert, or a citrusy treat any time of year.

Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 tbsp lemon zest
  • 3 tbsp lemon juice
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 12 tbsp lemon juice (for glaze)
  • Optional: extra lemon zest for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 or 9×9 inch pan with parchment paper or grease lightly.
  2. Cream butter and sugar together in a bowl until smooth.
  3. Mix in eggs, lemon juice, lemon zest, and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to wet mixture and stir until smooth.
  5. Spread batter evenly in the prepared pan. Bake for 22–28 minutes or until a toothpick comes out with moist crumbs.
  6. Let the brownies cool almost completely.
  7. Whisk together powdered sugar and lemon juice to make the glaze. Pour over cooled brownies and spread evenly.
  8. Let glaze set, then slice into squares and serve.

Notes

  • Add fresh berries like raspberries or blueberries before baking for a fruity touch.
  • Use Meyer lemons for a sweeter citrus flavor.
  • Make gluten-free by using a 1:1 gluten-free flour blend.
  • Dust with powdered sugar if skipping the glaze.
  • Mix in white chocolate chips for a creamy contrast.
  • Let brownies cool before glazing to prevent glaze from soaking in.
