Description
Tender and juicy crock pot teriyaki chicken simmered in a sweet and savory sauce, perfect for a fuss-free dinner served over rice or noodles.
Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 cup teriyaki sauce (store-bought or homemade)
- ¼ cup honey or brown sugar
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp rice vinegar
- 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
- Optional garnish: sliced green onions, sesame seeds
Instructions
- Place chicken in the bottom of the crock pot.
- Whisk together teriyaki sauce, honey or brown sugar, garlic, ginger, and rice vinegar in a small bowl.
- Pour sauce over chicken, cover, and cook on low for 4–5 hours or high for 2–3 hours until chicken is tender and cooked through.
- Remove chicken and shred or slice; return to crock pot.
- For thicker sauce, whisk cornstarch and water, stir into sauce, and cook on high for 10–15 minutes until thickened.
- Serve chicken over rice or noodles, topped with green onions and sesame seeds.
Notes
- Add sliced bell peppers, broccoli, or snap peas during last 30 minutes of cooking for extra veggies.
- Add pineapple chunks for a sweet tropical twist.
- Use chicken thighs for richer flavor and more moisture.
- Stir in sriracha or crushed red pepper flakes for a spicy version.
- Store leftovers in airtight container in fridge up to 4 days or freeze up to 2 months.
- Reheat on stove or microwave until hot.
