Description

Easy Chicken & Stuffing Casserole is a cozy, one-dish comfort meal featuring tender chicken, creamy soup, and a golden buttery stuffing topping. It’s quick to prepare, made with pantry staples, and perfect for busy weeknights or feeding a crowd.

Ingredients

  • 3 cups cooked, shredded or diced chicken (e.g., rotisserie)
  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom)
  • ½ cup sour cream or milk
  • 1 box (6 oz) stuffing mix (herb or cornbread flavor)
  • 1 ½ cups chicken broth or water
  • ¼ cup melted butter
  • Optional: 1 cup frozen mixed vegetables or sautéed onions
  • Optional: 1 cup shredded cheddar or Swiss cheese

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, mix cream of chicken soup with sour cream or milk until smooth.
  3. Stir in cooked chicken and optional add-ins like vegetables or cheese.
  4. Spread the chicken mixture evenly into the prepared baking dish.
  5. Prepare stuffing mix according to package instructions, using chicken broth for added flavor. Stir in melted butter.
  6. Spoon stuffing over the chicken layer and gently press down.
  7. Bake uncovered for 30–35 minutes, until bubbly and golden on top.
  8. Let rest for a few minutes before serving.

Notes

  • Use green beans, broccoli, or mushrooms for added vegetables.
  • Top with crispy fried onions or crushed Ritz crackers for crunch.
  • Make homemade cream sauce if avoiding canned soup.
  • Assemble ahead and refrigerate or freeze before baking.
  • Let rest after baking to help the casserole set.
