Description

This Easy Chicken Cobbler Dinner Casserole combines tender chicken, creamy vegetables, and a golden biscuit-like topping for a comforting, all-in-one meal. It’s simple to make, uses pantry staples, and is perfect for busy weeknights or family dinners.

Ingredients

  • 3 cups cooked shredded or diced chicken
  • 3 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 2 cups baking mix (such as Bisquick)
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup butter, melted

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Spread shredded chicken evenly in the bottom of the dish.
  3. Layer frozen mixed vegetables over the chicken.
  4. In a bowl, whisk together cream of chicken soup and chicken broth. Pour evenly over chicken and vegetables.
  5. In another bowl, combine baking mix, milk, salt, and pepper. Mix until just combined.
  6. Spoon or pour baking mix batter evenly over the top without stirring layers together.
  7. Drizzle melted butter over the casserole.
  8. Bake uncovered for 40–45 minutes, until the topping is golden brown and cooked through.
  9. Let rest for 10 minutes before serving.

Notes

  • Swap mixed vegetables for peas and carrots, or add mushrooms for variety.
  • Mix shredded cheddar into the chicken layer for extra cheesiness.
  • Use cream of mushroom soup instead of cream of chicken for a flavor twist.
  • Adjust baking mix ratio for a fluffier, more biscuit-like topping.
  • Add hot sauce or pepper jack cheese for a spicier version.
