Ingredients

Chicken:

  • 2 chicken breasts (boneless, skinless)

Cheese and Mushroom Filling:

  • 1/2 cup cream cheese (softened)
  • 1/2 cup grated mozzarella cheese
  • 1 cup mushrooms (sliced)
  • 2 cloves garlic (minced)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C). Slice a pocket into each chicken breast.
  2. Sauté mushrooms: In a skillet, sauté mushrooms with olive oil and garlic for 5 minutes until softened. Season with salt, pepper, and thyme. Let cool slightly.
