Description

A fun, savory twist on classic chicken casserole—this Doritos Cheesy Chicken Casserole layers seasoned chicken, creamy sauce, and melty cheese, topped with crushed Doritos for a satisfying crunch and flavor burst. It’s easy, irresistible, and perfect for family dinners or potlucks.

Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream or Greek yogurt
  • 2 cups shredded cheddar cheese (or Mexican blend), divided
  • 2 green onions, sliced (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 2 cups crushed Doritos (Nacho Cheese or Cool Ranch)
  • Optional mix-ins: 1/2 cup corn, 1/2 cup black beans, 1/4 cup diced bell peppers or jalapeños

Instructions

  1. Preheat the oven to 350 °F (175 °C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine chicken, cream soup, sour cream, 1 cup of cheese, green onions, garlic powder, onion powder, salt, and pepper. Stir until smooth.
  3. Add any optional mix-ins and mix to incorporate.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Top with the remaining cheese and a generous layer of crushed Doritos.
  6. Bake uncovered for 20–25 minutes, until bubbly and slightly golden.
  7. Remove from oven, let rest for 5 minutes, and garnish with more green onions or sour cream if desired before serving.

Notes

  • Make-ahead: Assemble and refrigerate, then top with chips and bake just before serving.
  • Extra crunch: Mix Doritos with breadcrumbs for a dual-crunch topping.
  • Spicy variation: Use spicy Doritos and add jalapeños or chili flakes to the mix.
  • Healthier version: Use low-fat cheese and Greek yogurt in place of sour cream.
