Ingredients
- 3 medium zucchini, sliced
- 1 tablespoon olive oil
- 1/2 pound ground turkey or ground beef
- 1 cup pizza sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup sliced pepperoni
- 1/4 cup chopped bell peppers
- 1/4 cup chopped onions
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Heat olive oil in a skillet over medium heat.
- Add the ground turkey or beef and cook until browned and fully cooked. Drain excess grease if needed.
- Stir in the pizza sauce, Italian seasoning, garlic powder, salt, and black pepper. Simmer for a few minutes to blend the flavors.
- Arrange the sliced zucchini evenly in the prepared baking dish.
- Spread the meat and sauce mixture over the zucchini layer.
- Sprinkle mozzarella and Parmesan cheese evenly over the top.
- Add the sliced pepperoni, chopped bell peppers, and onions.
- Bake for 25–30 minutes until the cheese is melted and bubbly.
- Let the casserole cool slightly before serving.
