Ingredients
- 2 cups fresh ripe peaches, peeled, pitted, and chopped
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 2/3 cup warm milk
- 1 large egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
- Vegetable oil for frying
- Confectioners’ sugar or glaze (powdered sugar + milk) for topping
Instructions
- In a bowl, whisk together flour, granulated sugar, baking powder, and salt.
- In another bowl, mix warm milk, beaten egg, melted butter, and vanilla extract.
- Combine wet and dry ingredients until just mixed.
- Gently fold in the chopped peaches.
- Heat vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil, giving them space to expand.
- Fry fritters for 2–3 minutes per side until golden brown.
- Remove with a slotted spoon and drain on a paper towel-lined tray.
- While warm, dust with confectioners’ sugar or drizzle with glaze.
