Description

Delicious Caprese Pasta Salad combines the classic flavors of tomato, mozzarella, and basil with pasta and a balsamic dressing. It’s a refreshing and simple dish perfect for warm weather meals, picnics, or as a light lunch or side.


Ingredients

  • 12 oz pasta (rotini, bowtie, or penne)
  • 1 1/2 cups cherry or grape tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine), halved
  • 1/2 cup fresh basil leaves, chopped or torn
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar or balsamic glaze
  • 1 clove garlic, minced (optional)
  • Salt and pepper to taste
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, toss the cooled pasta with olive oil, balsamic vinegar, and garlic (if using).
  3. Add tomatoes, mozzarella, and basil. Gently mix to combine.
