Crockpot Loaded Steak & Potato Bake is a cozy, slow-cooked comfort dish featuring tender steak chunks, seasoned potatoes, melty cheddar cheese, and smoky bacon—perfect for easy, hearty dinners.
Ingredients
- 1.5 lbs steak (sirloin or chuck), cut into bite-sized pieces
- 1.5 lbs baby or russet potatoes, cubed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil or melted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme or Italian seasoning
- 1 1/2 cups shredded cheddar cheese
- 6 slices cooked bacon, crumbled
- Sour cream, for serving
- Green onions or chives, for garnish
Instructions
- Lightly grease the inside of your crockpot with nonstick spray or oil.
- Add steak, potatoes, onion, and garlic to the crockpot.
- Drizzle with olive oil or melted butter, then sprinkle with salt, pepper, paprika, and thyme. Stir to coat.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until steak is tender and potatoes are cooked through.
- 15–20 minutes before serving, sprinkle cheese and bacon on top, cover again, and let cheese melt.
- Serve warm with a dollop of sour cream and garnish with green onions or chives.
Notes
- Add mushrooms, bell peppers, or jalapeños for variety.
- Swap steak with kielbasa or chicken for a different protein.
- Use pepper jack or Monterey Jack cheese for a twist.
- Reheat with a splash of broth or cream if needed.
