Description

Crockpot Loaded Steak & Potato Bake is a cozy, slow-cooked comfort dish featuring tender steak chunks, seasoned potatoes, melty cheddar cheese, and smoky bacon—perfect for easy, hearty dinners.

Ingredients

  • 1.5 lbs steak (sirloin or chuck), cut into bite-sized pieces
  • 1.5 lbs baby or russet potatoes, cubed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme or Italian seasoning
  • 1 1/2 cups shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • Sour cream, for serving
  • Green onions or chives, for garnish

Instructions

  1. Lightly grease the inside of your crockpot with nonstick spray or oil.
  2. Add steak, potatoes, onion, and garlic to the crockpot.
  3. Drizzle with olive oil or melted butter, then sprinkle with salt, pepper, paprika, and thyme. Stir to coat.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until steak is tender and potatoes are cooked through.
  5. 15–20 minutes before serving, sprinkle cheese and bacon on top, cover again, and let cheese melt.
  6. Serve warm with a dollop of sour cream and garnish with green onions or chives.

Notes

  • Add mushrooms, bell peppers, or jalapeños for variety.
  • Swap steak with kielbasa or chicken for a different protein.
  • Use pepper jack or Monterey Jack cheese for a twist.
  • Reheat with a splash of broth or cream if needed.
  • Prep ingredients the night before and cook in the morning for convenience.
