Description

Crockpot French Onion Meatloaf with Melted Swiss Cheese is a hearty, comforting dish that combines juicy ground beef with French onion seasoning, caramelized onions, and gooey Swiss cheese. Slow-cooked to perfection, it’s a flavorful twist on a classic favorite.

Ingredients

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • ¼ cup milk
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 packet dry French onion soup mix
  • 1 cup caramelized onions (or sautéed until golden)
  • 6 slices Swiss cheese

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan, milk, eggs, Worcestershire sauce, salt, pepper, and soup mix. Mix gently until just combined.
  2. Shape mixture into a loaf and place into the crockpot (use parchment paper for easy lifting if desired).
  3. Spoon caramelized onions evenly over the top.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until internal temperature reaches 160°F (71°C).
  5. About 10 minutes before serving, lay Swiss cheese slices on top. Cover and let melt completely.
  6. Let rest for 10 minutes before slicing and serving.

Notes

  • Mix half ground beef and half ground pork for added flavor.
  • Swap Swiss with provolone or Gruyère for a different finish.
  • Add beef gravy or serve with mashed potatoes for extra comfort.
  • Lightly grease the crockpot or line with parchment for easy cleanup.
  • Oven option: bake at 375°F for 50–60 minutes, adding cheese in last 10 minutes.
