Description

Tender, slow-cooked chicken thighs coated in a tangy, slightly sweet Carolina Gold mustard-based BBQ sauce. This easy crockpot recipe delivers bold Southern flavor with minimal prep and is perfect for busy weeknights or casual gatherings.

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup Carolina Gold BBQ sauce (mustard-based)
  • 2 tablespoons yellow mustard
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place the boneless, skinless chicken thighs in a single layer at the bottom of the crockpot.
  2. In a medium bowl, whisk together the Carolina Gold BBQ sauce, yellow mustard, honey, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.
  3. Pour the sauce evenly over the chicken thighs, ensuring they are fully coated.
  4. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and cooked through.
  5. Serve the thighs whole with extra sauce spooned over the top, or shred the chicken directly in the crockpot and mix it with the sauce before serving.

Notes

  • Add a pinch of cayenne pepper or a dash of hot sauce for extra heat.
  • For deeper smoky flavor, add 1/2 teaspoon liquid smoke.
  • Increase honey or add 1 tablespoon brown sugar for a sweeter sauce.
  • Sliced onions can be added to the crockpot for extra flavor.
  • Bone-in chicken thighs may be used; adjust cooking time as needed to ensure doneness.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
