Description

This Crockpot Beef Tips & Noodles features tender, melt-in-your-mouth beef cooked low and slow in a savory gravy, served over soft, buttery egg noodles. It’s the perfect comforting, hands-off meal for busy days.


Ingredients

  • 2 lbs beef tips or stew meat, trimmed and cubed
  • 1 onion, sliced or diced
  • 2 cloves garlic, minced
  • 3 cups beef broth or stock
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • 1 tsp dried thyme or Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp cornstarch or flour (for thickening)
  • 12 oz egg noodles, cooked
  • 2 tbsp butter (for noodles)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Combine beef tips, onion, and garlic in the crockpot.
  2. Pour in beef broth, Worcestershire sauce, Dijon mustard, herbs, salt, and pepper.
  3. Cover and cook on low for 7–8 hours or high for 4–5 hours until beef is tender.
  4. Whisk cornstarch with a little cold water, then stir into the crockpot. Cook on high for 10–15 minutes until the gravy thickens.
  5. Meanwhile, cook egg noodles according to package directions, drain, and toss with butter and parsley.
  6. Serve beef and gravy over noodles and garnish with additional parsley if desired.

Notes

  • Add mushrooms during the last hour of cooking for more flavor.
  • Use a splash of red wine or heavy cream for a richer sauce.
  • Store noodles separately to keep them from getting soggy.
  • This dish freezes well—just thaw and reheat gently.
