Ingredients
- 2 lbs beef tips or stew meat, trimmed and cubed
- 1 onion, sliced or diced
- 2 cloves garlic, minced
- 3 cups beef broth or stock
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard (optional)
- 1 tsp dried thyme or Italian seasoning
- Salt and freshly ground black pepper, to taste
- 2 tbsp cornstarch or flour (for thickening)
- 12 oz egg noodles, cooked
- 2 tbsp butter (for noodles)
- Fresh parsley, chopped (for garnish)
Instructions
- Combine beef tips, onion, and garlic in the crockpot.
- Pour in beef broth, Worcestershire sauce, Dijon mustard, herbs, salt, and pepper.
- Cover and cook on low for 7–8 hours or high for 4–5 hours until beef is tender.
- Whisk cornstarch with a little cold water, then stir into the crockpot. Cook on high for 10–15 minutes until the gravy thickens.
- Meanwhile, cook egg noodles according to package directions, drain, and toss with butter and parsley.
- Serve beef and gravy over noodles and garnish with additional parsley if desired.
Notes
- Add mushrooms during the last hour of cooking for more flavor.
- Use a splash of red wine or heavy cream for a richer sauce.
- Store noodles separately to keep them from getting soggy.
- This dish freezes well—just thaw and reheat gently.
