Ingredients
- 4 medium sweet potatoes, peeled and cut into 1 to 1.5-inch cubes
- 2 tbsp olive oil or avocado oil
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 1/2 tsp garlic powder or smoked paprika (optional)
- 1 tsp fresh rosemary or thyme, chopped (optional)
- 1 tbsp honey or maple syrup (optional glaze)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
- Pat sweet potato pieces dry and place in a mixing bowl.
- Drizzle with oil, sprinkle with salt, pepper, and optional seasonings, and toss until evenly coated.
- Spread potatoes in a single layer on the prepared baking sheet, leaving space between pieces.
- Roast for 20 minutes, then flip using a spatula.
- Roast for an additional 15–20 minutes until edges are crisp and centers are tender.
- Optional: Drizzle with honey or maple syrup during the last 5 minutes of roasting for a glazed finish.
- Remove from oven, garnish with fresh herbs if desired, and serve hot.
