Description

Crispy Golden Rice & Potato Patties are crunchy on the outside, tender on the inside, and served with a tangy, creamy garlic-dill sauce—perfect as an appetizer, snack, or light meal.


Ingredients

  • 1 cup cooked rice (white or brown)
  • 1 cup mashed potatoes
  • 1 large egg
  • 1/2 cup breadcrumbs (plus extra for coating)
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/2 tsp smoked paprika or chili powder (optional)
  • Olive oil or cooking spray (for frying or baking)

For the Garlic-Dill Sauce:

  • 1/4 cup mayonnaise or Greek yogurt
  • 1/4 cup sour cream or cream cheese
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine rice, mashed potatoes, egg, breadcrumbs, Parmesan (if using), salt, pepper, and paprika. Mix until mixture holds together.
  2. Shape mixture into 8–10 patties, about ¾-inch thick. Coat each with extra breadcrumbs.
  3. For frying: Heat oil in a skillet over medium heat. Cook patties 3–4 minutes per side until golden and crisp. For baking: Preheat oven to 425°F (220°C), place patties on a parchment-lined sheet, spray with oil, and bake 15–18 minutes, flipping halfway.
  4. For the sauce: Whisk together mayonnaise or yogurt, sour cream, garlic, dill, lemon juice, salt, and pepper until smooth.
  5. Serve patties warm with a dollop of garlic-dill sauce. Garnish with extra dill or lemon zest if desired.
