Ingredients

  • Pasta (fettuccine, penne or spaghetti) – about 12 oz for 4 servings
  • 2 tablespoons olive oil or unsalted butter
  • 4 cloves garlic, minced
  • 1 can (14‑16 oz) crushed tomatoes or tomato sauce
  • 1­–2 tablespoons tomato paste (for richness)
  • ½ to ¾ cup heavy cream or half‑and‑half
  • Salt and freshly ground black pepper, to taste
  • Red pepper flakes (optional, for heat)
  • ½ cup freshly grated Parmesan cheese
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Cook the pasta in salted boiling water according to package instructions, then drain and set aside.
  2. In a large skillet over medium heat, heat the olive oil or butter and sauté the minced garlic for about 1 minute until fragrant.
  3. Stir in the tomato paste and cook for about a minute; then add the crushed tomatoes or tomato sauce.
  4. Season the sauce with salt, pepper, and red pepper flakes (if using). Let it simmer for 8‑10 minutes until it thickens slightly.
  5. Stir in the heavy cream (or half‑and‑half) and cook for another 2‑3 minutes until the sauce is smooth and creamy.
  6. Add the cooked pasta to the skillet and toss to coat evenly in the sauce.
  7. Finish by stirring in the grated Parmesan until melted, then garnish with fresh basil or parsley and serve immediately.
