Ingredients
- 2 cups sweet potatoes (baked or boiled and mashed)
- 1/4 cup unsalted butter (softened or melted)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/2 cup evaporated milk or half-and-half
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1 unbaked pie crust (store-bought or homemade)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the mashed sweet potatoes with softened butter and mix until smooth.
- Add granulated sugar, brown sugar, eggs, milk, vanilla, cinnamon, nutmeg, and a pinch of salt. Mix until the filling is creamy and well combined.
- Pour the filling into an unbaked pie crust and smooth the top with a spatula.
- Bake the pie for 50–60 minutes, or until the center is set and a knife inserted comes out clean.
- Let the pie cool completely on a wire rack before slicing, to help it set properly.
- Serve chilled or at room temperature, topped with whipped cream if desired.
