Description

Ingredients

  • 4 chicken breasts or thighs
  • 2 cups cooked rice
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup cream of chicken soup (optional)
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp butter or olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/4 cup grated parmesan cheese (optional)
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook rice according to package instructions and set aside.
  2. Heat butter or olive oil in a large skillet over medium heat.
  3. Season chicken with salt, pepper, paprika, and Italian seasoning.
  4. Sear chicken on both sides until golden, then remove and set aside.
  5. In the same skillet, sauté chopped onion and garlic until soft and fragrant.
  6. Add chicken broth and simmer while scraping up browned bits from the pan.
  7. Stir in heavy cream and cream of chicken soup (if using) until smooth.
  8. Return chicken to the skillet and spoon sauce over it.
  9. Simmer for 15–20 minutes until chicken is fully cooked and tender.
  10. Add parmesan cheese if desired and stir until melted.
  11. Serve chicken over rice and garnish with fresh parsley.
