Creamy Rice Pudding is a comforting, rich dessert made with tender rice simmered in sweetened milk and flavored with cinnamon and vanilla. It’s a timeless dish perfect for any occasion, served warm or chilled.
Ingredients
- 1 cup long-grain white rice
- 2 cups water
- 4 cups whole milk (or mix with heavy cream)
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (plus extra for garnish)
- Pinch of salt
- 1/4 cup raisins (optional)
- Zest of 1 lemon (optional)
Instructions
- In a medium saucepan, combine rice and water. Bring to a boil, reduce heat to low, cover, and simmer for 15–20 minutes until water is absorbed.
- In a separate large saucepan, combine cooked rice, milk, sugar, vanilla, cinnamon, and salt. Stir well.
- Bring to a gentle simmer over medium heat. Reduce heat to low and cook for 25–30 minutes, stirring frequently, until thickened and creamy.
- In the last 5 minutes, stir in raisins and lemon zest if using.
- Remove from heat and let cool slightly. Serve warm or refrigerate for a chilled version.
- Spoon into bowls and garnish with extra cinnamon if desired.
Notes
- For extra creaminess, substitute part of the milk with heavy cream or half-and-half.
- Add chopped nuts or shredded coconut for more texture.
- Use coconut or almond milk for a vegan version.
- Add fresh or dried fruit for added sweetness and flavor.
- To reheat, add a splash of milk to loosen the pudding.
