Ingredients

  • 12 oz pasta (fettuccine, penne, or preferred shape)
  • 2 tbsp olive oil or butter
  • 10 oz mixed mushrooms (cremini, button, shiitake, or portobello), sliced
  • 3 garlic cloves, minced
  • 1/2 onion or 1 shallot, finely chopped (optional)
  • 1 cup heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1 tsp fresh thyme or 2 tbsp chopped parsley
  • Salt and pepper to taste

Instructions
