Ingredients
- 12 oz linguine pasta
- 1 lb boneless, skinless chicken breasts or thighs
- 2 tbsp Cajun seasoning
- Salt and black pepper to taste
- 2 tbsp olive oil or butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (optional)
- Red pepper flakes (optional)
Instructions
- Cook linguine according to package directions. Drain and set aside.
- Season chicken with Cajun seasoning, salt, and pepper.
- Heat olive oil or butter in a large skillet over medium heat. Cook chicken 4–5 minutes per side until golden and cooked through. Remove and let rest, then slice.
- In the same skillet, melt a bit more butter and sauté garlic for 1 minute until fragrant.
- Stir in chicken broth and heavy cream. Bring to a gentle simmer.
- Add mozzarella and stir until melted and creamy. Season with additional Cajun spice or salt if needed.
- Add cooked linguine and sliced chicken to the skillet. Toss to coat evenly.
- Top with Parmesan, parsley, or red pepper flakes if desired. Serve warm.
