Description

Creamy garlic mushroom chicken thighs are a rich and comforting one-pan meal featuring golden seared chicken thighs simmered in a velvety garlic mushroom sauce. Perfect over mashed potatoes, pasta, or rice, this dish is flavorful, cozy, and easy enough for weeknights but elegant enough for guests.


Ingredients

  • 46 bone-in or boneless skinless chicken thighs
  • Salt and black pepper, to taste
  • 2 tbsp olive oil or butter
  • 4 cloves garlic, minced
  • 8 oz mushrooms (cremini or button), sliced
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 12 tsp fresh thyme or parsley, chopped (optional for garnish)

Instructions

  1. Season the chicken thighs with salt and pepper on both sides.
  2. In a large skillet, heat olive oil or butter over medium-high heat. Sear the chicken thighs for 5–7 minutes per side until golden and cooked through. Remove from the pan and set aside.
  3. In the same pan, add mushrooms and cook until browned and tender, about 5–6 minutes.
  4. Stir in the minced garlic and cook for 30 seconds until fragrant.
  5. Pour in the chicken broth and simmer for 2–3 minutes to reduce slightly.
  6. Reduce heat to low and stir in heavy cream and parmesan cheese. Simmer for 3–5 minutes until the sauce thickens.
  7. Return the chicken to the pan and spoon the sauce over the top. Simmer for another 2–3 minutes to meld flavors.
  8. Garnish with fresh thyme or parsley and serve hot over mashed potatoes, pasta, or rice.

Notes

  • Pat the chicken dry before searing to get a golden crust.
  • Add baby spinach or kale to the sauce for extra greens.
  • Use coconut cream and skip cheese for a dairy-free version.
