Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley or thyme, for garnish
  • 2 lbs russet or Yukon Gold potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup milk or cream (warmed)
  • Salt and pepper, to taste

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté garlic until fragrant.
  4. Add chicken broth and let it simmer for 2–3 minutes. Stir in heavy cream and Parmesan if using.
  5. Return chicken to the skillet. Spoon sauce over chicken and simmer for 5 minutes to blend flavors.
  6. Meanwhile, boil potatoes until fork-tender. Drain and mash with butter, warm milk, salt, and pepper until smooth and creamy.
  7. Serve chicken over mashed potatoes with creamy garlic sauce and garnish with herbs.
