Ingredients
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley or thyme, for garnish
- 2 lbs russet or Yukon Gold potatoes, peeled and cubed
- 4 tablespoons butter
- 1/2 cup milk or cream (warmed)

Instructions
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a skillet over medium heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté garlic until fragrant.

- Return chicken to the skillet. Spoon sauce over chicken and simmer for 5 minutes to blend flavors.
- Meanwhile, boil potatoes until fork-tender. Drain and mash with butter, warm milk, salt, and pepper until smooth and creamy.
- Serve chicken over mashed potatoes with creamy garlic sauce and garnish with herbs.
