Description

Creamy Garlic Chicken & Golden Potatoes Tray is an easy one-pan meal featuring juicy chicken cooked with golden potatoes in a rich garlic-Parmesan cream sauce. It’s comforting, flavorful, and minimal fuss—perfect for a satisfying family dinner.


Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1.5 lbs baby or Yukon gold potatoes, halved or quartered
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried thyme or Italian seasoning
  • Salt and black pepper, to taste
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment or lightly grease it.
  2. Toss potatoes with 1 tbsp olive oil, salt, pepper, and half the herbs; spread on one side of the tray.
  3. Season chicken with salt, pepper, garlic, and remaining herbs; place next to potatoes.
  4. Roast for 25 minutes, flipping potatoes halfway through.
  5. Meanwhile, simmer cream, chicken broth, garlic, and Parmesan in a small saucepan until slightly thickened.
  6. Pour sauce over chicken and potatoes, then return to oven for 10–15 minutes until everything is cooked and bubbling.
  7. Garnish with parsley and spoon extra sauce over the potatoes before serving.

Notes

  • Add green beans or broccoli for a full sheet-pan meal.
  • Use bone-in thighs for more flavor—adjust cooking time accordingly.
  • Stir in mozzarella for extra cheesy sauce.
  • Prep potatoes, chicken, and sauce ahead to assemble just before baking.
  • Make dairy-free by using coconut cream and skipping Parmesan.
