Creamy Cucumber Bites with Herb Cheese and Cherry Tomatoes are a refreshing, elegant appetizer made with crisp cucumber cups filled with a flavorful herb cheese mixture and topped with juicy cherry tomatoes.
Ingredients
- 2 large cucumbers
- ½ cup cream cheese, softened
- 2 tbsp sour cream or Greek yogurt
- 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
- 1 tbsp fresh parsley, chopped
- 1 garlic clove, minced (optional)
- Salt and black pepper, to taste
- 10–12 cherry tomatoes
- Paprika, for garnish (optional)
- Fresh chives or parsley, for garnish
Instructions
- Peel cucumbers in alternating stripes and slice into thick rounds (1.5–2 inches each).
- Use a melon baller or small spoon to scoop out a cavity in each cucumber round, without going all the way through.
- In a bowl, mix cream cheese, sour cream or yogurt, dill, parsley, garlic (if using), salt, and pepper until smooth.
- Spoon or pipe the herb cheese mixture into each cucumber cavity.
- Top each with a cherry tomato.
- Sprinkle with paprika and garnish with chopped chives or parsley.
- Chill for 10 minutes before serving.
Notes
- Pat cucumber rounds dry to prevent sogginess.
- The herb cheese filling can be made ahead of time and refrigerated for up to 24 hours.
- Customize toppings with olives, radishes, or crushed nuts for variety.
- Use a piping bag or zip-top bag for neat filling application.
